Grilled chicken breasts are a standard fare in the healthy eating routine. However, chicken breasts have the same problem as pork loins; they can be tasteless and dry.
I have changed up my chicken routine and added an awesome lemon based marinade into the mix. I like the way this turns out!

I have changed up my chicken routine and added an awesome lemon based marinade into the mix. I like the way this turns out!
Lemon Dijon Marinade
- 1/4 cup olive oil
- Juice of two large lemons
- 1 Tablespoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon red pepper flakes.
I slice the chicken breast in half to form cutlets and then soak them in the marinade for at least two hours.
The chicken gets grilled over direct high heat for five minutes per side.

Finally the grilled chicken is plated, sliced and served on a bed of Romaine lettuce with Caesar dressing.
I know...I really should skip the Caesar dressing but it is a weak point for me. At least I don't drink it straight from the bottle :)
