Pork loins are a high protein, low fat option when it comes to putting something on the grill. The only problem is that they can turn out as dry as a hockey puck and pretty bland.
I fixed those problems by using an apple juice injection coupled with a Chinese Five Spice based dry rub.

I trimmed up a pork loin (I think it weighed about three and a half pounds) and injected it with 1 cup of apple juice mixed with a tablespoon of salt. The injection made sure that I got nice flavor all of the way through the loin and that it would stay juicy.
The Dry Rub for the Loin was as follows:
- 4 Tablespoons turbinado sugar
- 1 Tablespoon kosher salt
- 1 Tablespoon Chinese Five Spice Powder
- 1 teaspoon black pepper
- 1 teaspoon granulated garlic
I set up my kettle for indirect high heat and let the loin cook for about 90 minutes.
Once the loin hit an internal temperature of 145F it was pulled from the grill and allowed to rest for 20 minutes before slicing and serving.
It was great!
