Ribeye Steak with Veggies

Giant ribeye steaks are my weakness.  I know the amount of fat in these things is insane but they just taste so damn great.  I figured if I added some veggies to the mix then it would at least start to approach being healthy.

Started things off with a 1.25 pound ribeye that had been seasoned with salt and pepper.  I grilled this guy over high heat on my Weber Genesis for 5 minutes, rotated the steak 90 degrees and let it go for another 5 minutes.

After 10 minutes I had some pretty grill marks!  I flipped this beast over and then added some bacon wrapped asparagus and mushrooms to the grill.  The heat was turned to Low-Medium at this point.

The veggies turned out great!  I brushed everything with some Italian dressing while grilling for a little extra flavor boost.  Loved the final look of the asparagus!

The steak was grilled to an internal temperature of 130F.  Perfect Medium-Rare with more Rare than Medium!
No final plated pics.  It was getting dark and I was hungry!

I'll try to do something healthier next time!
