I am jumping aboard the Meatless Monday train! There is something in my male ego that keeps telling me, "You have to eat meat!" I also realize that my ego and past habits are what have gotten my out of shape and overweight. Going meatless for one day out of seven is not that big of a deal. Going meatless will force me to change my eating habits a little bit and that is what I am going for; small changes.
I started off my first Meatless Monday with a delicious and hearty breakfast grilled on a cast iron griddle. I started with some seasoned hash browns.

While the hash browns were cooking I diced up some tomatoes, mushrooms and asparagus. I added a few black deans to the mix as well. This was going to be a very healthy omelet!
I added the veggies to the griddle and flipped the hash brows. The hash browns looked beautiful!
A few minutes later I added some egg whites. I guess my griddle wasn't seasoned enough because the egg whites did stick some. It wasn't a big deal but meant that the final product wouldn't be as pretty as I was hoping.
A few minutes later I flipped the eggs (well, sort of) and checked the hash browns. Everything was looking and smelling spectacular! I served this up on handmade plate my Mom gave me a few years back.
This breakfast was filling, full of protein and delicious! I was amazed at how bright the asparagus made the meal. It seemed like such a minor ingredient when I was putting everything together but it was absolutely the star of the show!
