I love grilling boneless skinless chicken thighs. They are cheap, have a ton of flavor and grill up pretty quick!

I marinated these chicken thighs in Italian dressing for three hours. The Weber was going on High heat and the chicken was grilled for about six minutes per side.
Served this up with a slice of watermelon for a nice little evening meal. I got to have a healthy little dinner while still enjoying the fun of playing with my grill. This is exactly what I am aiming for. If I can get in the routine of grilling simple, healthy and small dishes then I am really going to be able to turn things around with my weight!
In addition to eating better I have also been hitting the gym on a regular basis. The combination of eating better and exercising has really made a difference in how I feel about myself. The results aren't showing on the scale yet but I know that will come.
