Cedar Planked Catfish: This one is a keeper!

I just have a thing for catfish.  I love it when it's breaded and deep fried but t is also pretty tasty on the grill.  I have grilled catfish a couple different ways but this is far and away my favorite.  This was the first time I have ever used cedar planks for grilling but it will not be the last!

If you have never used planks before then please follow the instructions :)  Make sure you soak the plank for at least two hours.  You want the plank to char and smoke while you are grilling.  If you skip the soaking then it will just burn!

I seasoned two catfish filets with some bbq seasoning, added them onto the soaked plank and grilled them with high heat on the Weber grill.  Here is what they looked like after 10 minutes.

After 15 minutes of grilling I placed a little butter on top of each filet.  I let them grill another 5 minutes and after 20 minutes of total grill time was rewarded with this beautiful site!

I served these up with some steamed veggies and it was a treat!  The catfish had soaked up a lot of smoke from the charring cedar and tasted fantastic.  I think this will be the only way I ever grill catfish again!

The photos are fantastic! I can almost taste it, it looks so good. I will definitely try this receipt this weekend. I've got cedar planks and I'll soak them for a couple of hours prior to grilling on my Big Green Egg.
